Simon and Garfunkel Chicken



Carol is very diligent and rediscovers recipes that are golden oldies but need to be made so others might enjoy them. Here's a link to the recipe that I'm so happy she shared with me.

Ingredients:

3 whole boneless/skinless chicken breasts 
1/2 cup butter
Salt and pepper, to taste
6 slices mozarella cheese
Flour
1 egg, beaten
Dry bread crumbs
2 tbs. parsley
1/4 tsp. sage
1/4 tsp. rosemary
1/4 tsp. thyme
1/2 cup white wine or cooking wine

Directions:

Flatten chicken. Spread each breast with 1 tsp. of softened butter. Place 1 slice of cheese on each piece of chicken on top of the chicken breast that is buttered. 

Roll up and fasten with toothpicks.

Coat gently with flour. Dip in egg and roll in bread crumbs.

Arrange in buttered baking dish.

Melt remaining butter with the seasonings and drip over the chicken pieces.

Bake at 350 degrees for 30 minutes.

Baste occasionally. Pour wine over chicken and bake 20 minutes more.

  4. Ahhhh yes-I remember this one-we LOVED it too. What a perfect partner for those marinated tomatoes.

    I have to ask- do you have any idea where the NAME of the chicken came from? Looks good...I wonder how it turns out with other cheeses? Or would the spices be specific to the mozzarella?

    1. It's a old recipe that most likely has been around since the 60's when Simon and Garfunkel were popular. I would guess it was named because of the ingredients.

      If you try another cheese I would love know how it tasted.

      We loved it with the mozzarella.

  26. I don't use any kind of wine at all in my life, do you think white grape juice would be a terrible substitute? I would love to try it! Thanks for sharing with us at Country Fair Blog Party! We really LOVE having you share with us!

    1. Sure- the grape juice might add sweetness to the the chicken.You can always try a tablespoon of white wine vinegar diluted in a 1/4 cup of water in place of the wine. Your other options are to use chicken broth, water, apple juice or any diluted vinegar. Another suggestion is you might want to buy a bottle of dry vermouth. It's not that good to drink by itself, but a great sub for white wine.
