Hoppin' John Stew with Cauliflower Rice





This recipe is from an old Rachel Ray magazine. It was sitting in one of my recipe piles and I thought - why did I save this one? I'm not a fan of rice. 

See, there's always a reason not to toss those old recipes! Got to think outside of the box (smile).

Ingredients:

2 tablespoons extra virgin olive oil
1 large onion chopped
4 cups chicken broth
1 bunch collard greens- remove stems and chop leaves coarsely
1 teaspoon dried thyme
2 15.5 ounce cans black eye peas- rinsed
1 1/2 cups cauliflower-  pulsed in the food processor till you get the consistency of rice. 
3 tablespoons cider vinegar
Cajun seasoning to taste 

Directions:

In a large saucepan, heat the olive oil over medium heat.

Add the onion and cook stirring occasionally until softened.

Stir in the broth, collard green and thyme and bring to a boil.

Reduce the heat to medium/low and simmer for 15 minutes.

Add the black eye peas and the cauliflower rice. Cook for an additional 7-10 minutes on med/low heat.

Stir in the vinegar and season to taste.

This is really good! Great for those meatless meal nights

  3. HAHAHAHA-I saw rice in the title and thought WHAAAAAAAT? NOT LINDA! Great adaption using cauliflower instead.....that made it something you'd love. PERFECT! :)

    Are you still getting collard greens from the ones you planted?

    1. I had to use up the collards i had in the pot. That was the last of them.

      Rice? What was I thinking when I saved that recipe? LOL

  5. I likely would like this recipe but would have to sub out the collard greens. I don't think those greens are sold around here. Mind you, I have never looked specifically for them.

    1. So many "greens" you can sub for the collards. Kale, mustard greens, you could even try fresh spinach.

      I like collards, they aren't as bitter as some of the other greens. Lots and lots of fiber in this dish.

  6. Great idea to swap out the rice with cauliflower. Don't remember what black eyed peas taste like, but this does sound good.

    1. I was thinking after I made this it would be a great dish for New Years. In the south you are suppose to eat greens and black eye peas for luck and wealth. SURE going to make this next year!!!!!!!!!

    1. April- I'm at a rice fan so why I kept the recipe was kinda strange. I guess I knew I would swap the cauliflower for the rice.
