French Onion Soup Casserole




Walmart always has a area in the front with day old bread. I saw this recipe on Recipe Lion. I actually remembered the recipe when I saw the bread and decided to give it a try.

Ingredients:

3 medium sweet onions, sliced
3 tablespoons butter
4 cups beef broth ( used reduced sodium broth)
1 teaspoon Worcestershire sauce
Approximately 6-8 slices French bread, about 1/2-inch in thickness
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese

Directions:

In a medium size saucepan melt the butter over medium heat.

Add the onion and slowly cook for about 30 minutes over medium to low heat. Stir occasionally.

Add the beef broth to a medium to large saucepan and  add the Worcestershire sauce. Heat the broth mixture until it boils.

Reduce heat to low, Simmer, uncovered, for about 30 minutes. The broth will reduce.

Pour onion and broth mixture into a greased casserole dish.
Lightly toast the slices of bread. Place toasted bread in a single layer on top of onion/broth mixture.

Cover bread with a thick layer of the shredded mozzarella and top with grated Parmesan.


Bake, uncovered, in a 350 degree oven for 20 to 30 minutes, or until cheese is melted and brown on top.

    Would you believe I've never eaten French Onion Soup? It was never something that called to me. I guess my brain thinks of soup with more in it? Who knows....

    2. OMG.....this is the road to my stomach. I LOVE French onion soup. Carol, I can't believe you never ate it. The onions and the gooey cheese is heaven. I am going to copy this one out. Now you got me drooling.

      BTW Carol, I passed the pizzelle recipe on to my aunt who is an amazing pizzelle maker. I told her she must try them. I gave her a copy of the recipe since she doesn't own a computer and has no interest in them. I printed it out in Big print so she can read it well. She is 88. I will update you if she makes them. I am going to try them real soon.

    3. Linda-I HEAR THAT! Aren't the beef and pork prices INSANE? Ugh.....looks like you had a fantastic meal!

      Hi Myra-tell your Aunt the savory pizzelles ooze a little butter when they cook...but I hate to take any away because they need the moisture...know what I mean? I have a paper towel handy and mop up the drizzle....ain't no thing...the taste makes the extra step SO worth it. I hope you and your aunt enjoy them as much as we did. About time for me to make some more! :)
