Whole Wheat Tortilla Quiche












The recipe's name is Thanksgiving Leftover Quiche. Thanksgiving is gone but we had turkey for Christmas and figured I would try this.

Such a simple idea and it's delicious.

Ingredients:

1 medium (or large) whole wheat tortilla
1 egg
1 egg white *
1/4 cup cheese, grated ( used fresh Parmesan)
1/3 cup sweet potatoes, mashed ( can use mashed white potatoes)
handful cooked spinach - drain out any excessive fluid
2 cherry tomatoes, sliced in half ( used roma tomatoes- sliced thin)
1/3 cup Turkey (or black beans or chicken )

Directions:

Preheat oven to 375F. 

Press tortilla into a pie dish which the bottom was sprayed with olive oil or the oil of your choice.

 In a medium size bowl, combine egg, egg white * used another whole egg and mashed sweet potatoes until smooth. Add in cheese, spinach and turkey. 

Cut tomatoes and place on top of the quiche.

Pour mixture onto the tortilla.

 Bake for 20-25 minutes or until egg is set in the preheated oven. 

Broil for the last 1 minute of cooking. 

Slice and eat.

  1. What a great idea! Something different for leftover turkey and you know we have turkey a lot like you guys do.

    I'd LOVE this----I think Bob might too.....might have to use regular potatoes since he's not a sweet potato fan-I love the darned things.

    I should really use tortillas more....I always have them in the freezer for enchiladas....I just never think outside that box. Quesadillas are SO much more appealing to me than a sandwich since I'm not a big bread eater....why don't I make them more often?

    I need to change that...and try this quiche..... :)

  2. This sounds interesting, but going to pass since it has way too much egg in there. I do use Tortillas a lot tho. I love making wraps with the, and I like that they are not as filling as bread.

  3. This sounds good, I must give it a try. We don't have turkey except on thanksgiving so it will be a while. I have to make this Southern cornbread with hot peppes dressing every year for the family and I usually turn it into the bottom layer of a tamalie (sp) pie. This would be a great addition to try. You could even bake it as a frattata (sp) Sorry my brain can't remember how to spell today.
