Triple Play Peanut Butter Cookies








As I've mentioned Carol sends me recipes all the time, which I copy and save. This recipe is from King Arthur Flour.

Gabe doesn't care for sweets but will eat peanut butter cookies and I recently found out that Ted Petty also is a huge fan.

You read that there are "angels" on earth. I've  never actually met one until Ted came into my life via our 96 year old neighbor.

Ted is Leda's angel. She would not be able to live in her home if Ted wasn't in her life. I can't mention all the things he does for her because there are way too many. His kindness is insurmountable.

His wife Marie is extremely kind and I am proud to call her my friend.

I made this recipe for him. Today is his birthday and both Gabe and I wish him the very, very best.


Ingredients:

1 cup butter, very soft but not melted
1 cup dark brown sugar
1 cup sugar
1 1/4 cups peanut butter
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 2/3 cups flour
1 1/4 cups chopped dry roasted salted peanuts (mine weren't salted)
1 1/3 cups peanut butter or chocolate chips (I used peanut butter chips)

Directions:

Preheat oven to 350°.

 Line baking sheets with parchment paper.

 Cream butter, sugars, peanut butter, baking powder, baking soda, and salt. (I followed the mixing instructions and added the baking powder, soda and salt to the creamed mixture even though you would normally add them to the dry ingredients.) 

Add eggs one at a time.

 Stir in the flour, nuts, and chips. (I did this by hand.) 

Drop by rounded tablespoon onto prepared sheets. I used the cookie scoop Carol sent me and LOVE IT!

 Bake for 10-11 minutes, until set and brown around the edges.

Remove from oven and cool on pan 5 minutes before transferring to wire racks to cool.

Gabe is my peanut butter connoisseur and told me they were really good.

    Yes indeed-there truly are angels among us....and Ted sure is Leda's angel. Ted and Marie sound like wonderful people-Leda is very lucky to have Ted AND to you watching over her. I know she knows that.

  4. Love the sound of these cookies. I know I would have to eat them all myself as no one in my family likes peanut butter cookies! Too bad for them missing out on their deliciousness.

    Leda is very fortunate to have such good friends like Ted, Marie and you. So nice to know that she can stay in her own home at her age. Kudos to her friends who make this possible.

  11. These look fabulous! You're right, it does seem strange to cream the bp, etc. in with the butter. I wonder why that is? I'll have to do some research - might come in handy with other recipes?? That said, it's probably a typo lol. Pinning these! :) [#CraftyAndDelicious]
