Eggnog Smoothie

I tend to keep small amounts of food in the fridge. They aren't forgotten ( well maybe sometimes) but I'm on the frugal side and don't like wasting food.

With Christmas a few days away I had a large container of almond milk I wanted to use up. There was 1/2 cup left, not much BUT seeing a few other things I could use I put together this "smoothie".

We always have banana's in the house and the plan was to make some banana bread but not feeling well for a few days squashed those plans. I told Gabe to finish the banana's  but there was one left so decided to add that to the smoothie.

Eggnog is one of my favorites plus yogurt is always in the fridge. I've  wanted to take a photo of something in the little Christmas mug and my plan came together.

Ingredients:

1/2 cup almond milk
1/2 cup egg nog
1 small banana
1  6 oz container vanilla yogurt

Cool whip to garnish

Directions:

I don't have a blender in Florida so I added all the ingredients to the food processor and whipped until the banana was smooth.

Pour into glass and garnish with cool whip.

  1. I think you should change the name of this blog to Frugal !! You are the most amazing person when it comes to wasting nothing. And the wonderful things you find to make with the leftovers make it seem like you bought the items just to make it. This looks great, Linda. The mug is very festive and I will say cheers to you.

  3. What a great photo-WAIT until Bob sees it....the tree in the back really makes it-all those pretty colored lights.

Your creation sounds delicious-and looks it too. I don't often make smoothies for some reason....just never think of it I guess. What a super way to use up the dribs and drabs of items you have on hand. This one looks like a winner, Linda.. Cheers! :)

  5. That looks great and sounds wonderful. I made home made eggnog today. It has become a tradition, that and rum cake and this year I added apple pie from a recipe I found that is called Nebraska style.

I agree with Myra, frugal sounds like a good name for how you cook. Have a great Christmas.

    1. Thanks Michelle! It's funny cause I needed to use up the almond milk to get the carton out of the fridge and the banana was either going in a recipe or in the freezer. A idea that worked and glad Gabe(?) enjoyed it.

Thanks again for all your support. You are the best!
