Quick Peanut Butter Chocolate Chip Cookies EASY!!!

In one of my conversations with Carol I mentioned I had a few boxes of cake mixes. She told me she would send me a few recipes and this one from Duncan Hines looked like something even Gabe would like.

Ingredients:

1 16.5 ounce  classic yellow cake mix

1/2 cup creamy peanut butter

1/2 cup butter or margarine

2 large eggs

1 cup chocolate chips

Directions:

1. Preheat oven to 350 degrees

2. Line cookie sheets with parchment paper or lightly grease your cookie sheets.

3. In a large bowl add the cake mix, peanut butter, eggs and butter or margarine and beat on low speed with an electric mixer until well combined.

4. Stir in the chocolate chips

5. Drop by rounded teaspoons onto the prepared cookie sheet.

6. In the 350 degree oven bake the cookies for 9-11 minutes then let them cool on the cookie sheet for about 2 minutes.

7. Remove cookies from the cookie sheet to a cooling rack.

Enjoy!

  1. Those look great Linda! Did Gabe enjoy them? I have been on a mission to use the cake mixes I have in the freezer...yes some the old regular size. We love peanut butter cookies-and so don't Stephen and Nicholas.....add chocolate chips and they'll love them even more! :)

I've really gotta take some time to go through all the old recipes I wrote down-I know there's a treasure trove of cake mix cookies in there......all I need is the TIME to do it....sheesh.....

  4. I just remembered, I forgot to come here today. I am so glad I remembered. The cake mix cookies are the best. I used to make this recipe all the time. They are sooooooo good. With my memory being the way it has been lately, I am surprised I remembered about these. I hope Gabe enjoyed them. He had to !!!! A question. When you grease your parchment paper, can you use a cooking spray? I never have any greasing stuff around anymore. I remember there was a spray called Baker's Joy, which was a combo of flour and cooking spray. Thanks Linda for the great recipe, and of course Carol for passing it on.

    1. If you use parchment you don't need to spray. You certainty can spray the pan with Baker's Joy. I use it when I can get it on sale.
