Sweet Potato Noodles with Roasted Red Pepper “Cream” Sauce

This recipe from Detoxinista is delicious! I made it awhile back and since Halloween is today I wanted to add a special healthy treat.

The recipe is two parts. It's easy and hope you enjoy it as much as I did.

The first part is the sauce:

Roasted Red Pepper "Cream" Sauce

ingredients:

1 cup steamed sweet potato chunks
1 cup almond milk ( if you would like to make your own almond milk check out the recipe from Nutrition Stripped)
1 teaspoon dried basil
2 cloves raw garlic 
1 roasted red pepper ( I didn't have a red pepper to roast so use one from the jar)
1/2  teaspoon sea salt ( didn't add the salt- figured the pepper from the jar had enough sodium in it)

directions:

Peel the sweet potato and cut into small chunks. 

In a medium size pot add water and the steamer basket and bring water to a boil and add the sweet potato. Depending on the size of the sweet potato will determine the time it takes to cook but when fork can be inserted easily- it's done. Just remember to be careful of the steam . 

Place the sweet potato on a plate and let it cool a bit. If you are using a blender and add the hot sweet potato the steam could make the top of the blender come off. 

The original recipe used a high power blender. I don't own one and used my food processor to make the sauce.

I added the sweet potato, milk, basil, roasted red pepper, garlic and salt (if you are using it) to the food processor.

Pulse in the food processor until smooth.

The sauce is amazing, quite frankly I'm surprised it make it to the noodles ( wink)

Sweet Potato Noodles:

Ingredients:

2 large peeled sweet potatoes
1 tablespoon butter
1 cup chopped asparagus ( didn't have so didn't add)
1/2 cup sliced mushrooms ( added more cause I didn't add the asparagus)
1/2 cup chopped scallions ( my addition)

1- Made the sweet potato noodles with a spiralizer, which I love or you can visit this site and it shows how to make with without the spiralizer.

2- My sweet potatoes were kinda small so I used 2 but you can use one and a half if the are large.  It will give you a lot of noodles.

3-In a large saucepan saute the mushrooms and if using the asparagus in the butter.

4- Add the sweet potato noodles. Don't cook to long, you want them to have some bite to them.

5- Remove the sauce from the blender or food processor and add to the sweet potato in the saucepan.

6- Make sure all the noodles are combined with the sauce.

7- Place a lid on the saucepan and the sauce will heat up with the noodles. Don't cook longer than 2 minutes otherwise it's going to be mushy.

8- You can season it at this point- add the salt and I added the scallions.

  1. I remember you telling me how good this recipe is. I haven't tried sweet potatoes on my Spiralizer yet.....I'd be the only one eating them....Bob doesn't like them.......silly man. :)

  2. This looks good. I tried another one of the sweet potato ones you had posted before, and it was good. This one will go on my to make list. I don't have a spiralizer, so I will just cut the potatoes in strips. Yum.

    1. Sweet potatoes are always on sale down here and I like sweet potatoes. Gabe will eat them once in awhile but prefers mashed potatoes.

  8. So many of my favorite ingredients! Well, except for the mushrooms. I've made lots of zucchini noodles, but I haven't made sweet potato noodles yet. It's a very cool idea! Visiting from SNF. =)

    1. No problem leave the mushrooms out. I didn't have asparagus and didn't want to run to the store so I subbed. It was delicious! The sauce you can add to pasta- it's so good but plan to make a lot!
