Preserving Basil

I'm not sure if my basil plant in Florida is still alive. I planted all the herbs I started in my little greenhouse- remember this cool gift from Gregory?

My basil plant did well on the deck in NY. If I didn't find a way to save the basil the deer would had a nice treat because Gabe sure isn't going to make room in the truck for it.

Saw this post on SusieJ. I have plenty of canning jars and lots of kosher salt. Easy to do, layer the clean basil leaves in a jar with the salt.

  1. Hi Linda, I had read about this and wanted to try it too! Thanks for the reminder! P.S. I love your jar with the ridges, so pretty for this pantry loving jar gal :)

  2. I SO remember that gift you got-and had HERB ENVY since I was knee deep in snow. :)

I'm gonna have to try this idea Linda-I too have plenty of canning jars and can easily pick up more kosher salt if need be. My little basil plant is doing OK right now but when it gets out of control.....HOPEFULLY....it will be nice to have a way to keep some of the leaves.

Now to find room in the freezer.......Hmmmmmm..... :)

  3. If there is some way to save something, trust Linda to find it. She is great with using up each little bit of food and preserving all she can. I hope this works for you. And I do remember Gregory's gift, it was the best ever.

  4. I'd try this, Linda but no basil around. I can well imagine nat your basil plant wouldn't have fit in your vehicle. Seriously, I think you need a UHaul trailer! :-)

    1. LOL Angela! I love plants but they are horrible to pack. You can't have anything on top of them and I use to worry when we traveled in cold months. I use to have them in boxes in the back seat but you know who now takes up that space. I'll take what I can but always wish it were more!

One more week and the packing begins.................

  5. Larry loves Fresh Dill and he puts it in the freezer. When I go to use it . It just isn't the same. I wonder if it could be saved like this..If so I will try it. My neighbor just gave me a bunch of canning jars that they said they don't need. They use the small ones. If this will work with Dill I will do this. Thanks Linda for finding things like this for us.
