Cola Cake





I really do miss Leta. I loved going over to see her and I'm always on the look out for Ted & Marie who come over daily and check on her. They are SO good to her and when we get back I'll have to make this cake for all of them. Leta would love it- she has a sweet tooth! ( Hi Marie -wink)

I had a 67.6 bottle of coke I wanted to use up.  The kids would love it, but they get enough sugar in the goodies I bake. Don't need their moms getting mad because I overdosed them with sugar! 

In my search to find recipes to use up the cola I found this  on allrecipes.

It got great reviews and you can use diet cola if you want to cut calories. Reviews also mentioned using different flavor soda- Cherry cola, Mt Dew, Sprite . 

I added one egg as suggested by one of the reviewers. It's such an easy recipe and it would be fun to have your child help you make it.

Ingredients:

1 18.25 ounce Chocolate Cake Mix ( this was when cake mixes were 18.25 ounces. I had an old vanilla mix which was that size so the recipe worked. Since it was a older mix I added baking powder, just to make sure it would rise. I have to try the recipe with the new "downsized" mix. I would add an extender or cut down the amount of cola.

1 12 ounce bottle or can of carbonated cola

1 egg

Directions:

1- preheat oven to 350 degrees. Prepare a 9 x 13 baking dish.

2-Combine the cake mix,cola and egg in a large bowl.Use a hand whisk to mix ingredients until light and smooth about 3 minutes.Pour the batter into the prepared pan.

3- Bake for 30 - 40 minutes or until toothpick inserted in the middle comes out clean.

4- Allow the cake to cool before cutting.

I will give an updated version when I make the downsized mix.

  1. Wow-what an easy cake! I've never tried anything like this-and I have a can of Sprite that Bob brought home from work in the refrigerator. I may have to give this a go.......I still have the old size cake mixes in the freezer.

    I bet Leda misses you as much as you miss her. I'm so glad the neighbors check on her-she's amazing living by herself at her age. You know she'll be so happy to see you back-I bet she misses those goodies you baked her somethin' fierce! She'll have her sweet tooth ready for you in the fall.

  2. Leta said for you to hurry home. we all miss u and Gabe. She told me yesterday someone is bringing her paper to the house for her and settting it on top of the shrubs. she said now she does not have to bend over. I am sure we will all enjoy your cake.
    Ted has not been to any auctions since yall left, We are glad Max is having fun with his friends. Hope Dottoe enjoyed her cake.

    1. Marie- Tell Ted we are still on to go to the auction, tell him I'm practicing keeping my hands still! Sure don't want to bid on something I don't want.
      Gabe said he will have to get his arm in shape. He's not sure if he can toss the paper on the shrub-but he will give it a try.
