Paddi's Rum Raisin Bread

I met Paddi on the internet and I really can't remember how long we have been friends. Paddi and her husband live in Montana and a few years ago traveled to NYC where I met them and we did all the "tourist" stuff. 


Paddi recently retired. She taught art and our home is graced with many beautiful things she has made for me.

She also is a fantastic cook and her jams and jellies are heavenly.

The recipe for the Rum Raisin Bread is too good not to share. She adapted the recipe and we hope you enjoy it.

Ingredients:

2 tablespoons rum
1/2 cup raisins
1/2 cup water
1 1/2 teaspoons yeast
1 teaspoon olive oil
1 egg
1/2 teaspoon rum extract
2 tablespoons heavy whipping cream
2 teaspoons butter plus more for the dough prep
1 teaspoon salt
2 teaspoons brown sugar plus more for the dough prep
1 tablespoon dry milk powder
2 cups flour
1 teaspoon cinnamon

directions:

Soak raisins in 1/2 cup water and 1 shot = 2 tablespoons rum.  She used Captain Morgan's Rum
for at least 1/2 an hour then microwave for 30 seconds. Drain the fluid into a large bowl and set the raisins aside.
Add the warmed rum water to a large bowl and pour in the yeast, brown sugar and oil. Stir with a wooden spoon or if you are using a kitchen aid mixer stir with bread hook. Add the remaining ingredients except the raisins and knead until the desired texture is achieved. ( about 5 min). Fold in the raisins and knead until they are mixed throughout the dough. Let rise in a covered bowl about an hour or until doubled in size.
Punch down and roll out flat on a slightly floured surface. Add melted butter, brown sugar and cinnamon. Roll up jelly roll fashion and cut into 2 parts. Fit into 2 small bread pans and add the remaining melted butter to the top. Cover and let rise. Bake 350 about 30 min

    1. Hey Chris- I think of you and Heidi all the time. You guys are like me and Myra and Paddi and Dottie. We were on a board for a very long time. I don't even remember how long we posted.

      One day when I win Mega Million I have a trip planned. All my close friends and my cousin will travel with me to some special place and have lots of fun.

  3. Me too Christine.....I have many many friends on the internet and they are my close buddies and I couldn't live without them. I have met Linda, and she is as wonderful in person as she is on here. Paddi is another of my internet buddies, and we have been friends for years and years. This recipe looks so good, I don't do much cooking or baking anymore, since it is only me and the dog, but I am going to keep this on hand in case I one day get in the mood. It looks so good. I have made several of Paddi's recipes, and they were the best. The one I remember was a pot roast, and boy was that good. I still have the recipe in my must make again folder. I do hope to meet more of you wonderful cooks on here, even tho I don't cook :-). Thanks Paddi and Linda for sharing the recipe, and for being here for me always.

  4. Wow, thanks Linda for doing this. I really love to cook and a couple of years ago I found a little pan that makes 4 mini loaves at once. It soon became my favorite cooking pan, and Christmas gift maker. I absolutely love this bread and we even were able to toast it yesterday for breakfast, although it was tricky getting it out of the toaster. I feel like Linda and Myra and I have always been friends. I wish we lived closer to each other and I want them both to come and see me. I would love to cook for you!

  5. If anyone is interested in my 4 loaf pan, I just got one that I ordered from K-Mart today. It was only 11 something and it came right to my door. ( That is a biggy if you live in the country). I am giving one to my friends Sandi and Conrad as a late anniversary gift. I am putting together a booklet of my favorite bread recipes too. That is why I made this bread.

    1. Hi Paddi-I have the individual 5x3-inch loaf pans.......is that about the size your breads measure? I hear ya about bread like this being a bit tricky to get out of the toaster. I've made plenty of loaves that give me fits when it comes to toasting them. I have some of those "pinchers" that grab toast that gets kinda wedged or lost in the toaster. My daughter made them at some thing she went to MANY moons ago. I just love them-they work slick! :)

      Thanks again for sharing your wonderful recipe........I'm really looking forward to having another bread making day soon. I know Bob and I are really gonna enjoy it,

  6. Linda- That bread looks amazing and thanks for posting Paddi's picture. It is always nice to put a face with a picture. Can you tell me where abouts in Montana you live Paddi. I am in North Dakota in Grand Forks so on the other side of the state. I just love your state, I always wanted to live there when I was younger and see the mountains everyday, but .....
    Also - I would love the roast recipe if you are willing to share. Elaine

    1. Hi Elaine, I live in the South Central part near Billings. We are in the Yellowstone River breaks which is rolling hills and pine trees. It is not true mountains but we are only about 60 miles from the Beartooths and can see the Pryor Mts, and the Crazy Mts as well as the Bearthooths. My pot roast recipe comes from the Montana Cookbook which has gone out of print, but can be acquired through on line book clubs. I use this book a great deal because it is how we cook around here and it makes sense. I go through North Dakota often because I have a daughter in Minnesota.
