Mango Avocado Salad
This is a wonderful combination! I adapted the recipe from Whole Food Market.
1 clove garlic, finely chopped
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lime juice
1 teaspoon grated orange zest
1/2 teaspoon honey
1 tablespoon extra-virgin olive oil
Sea salt to taste ( didn't add)
Ground black pepper to taste ( didn't add)
1 mango, diced (about 1 cup)
1 avocado, diced (about 1 cup)
1 tablespoon fresh cilantro- finely chopped
Sprinkle of sunflower seeds
In a large bowl, whisk together the garlic, orange juice, lime juice, orange zest, honey and olive oil.
Taste and adjust seasonings.
Add mango and avocado.
Toss to combine.
Garnish with sunflower seeds
