Sweet Potato Bacon Salad


It's been in the 80's and I wanted a salad but wanted to try something different. I have plenty of sweet potatoes left and this recipe from No Recipe fit what I was looking for. I adapted the recipe to taste.

Ingredients:

1 large sweet potato 
2 tablespoons mayonnaise
1 tablespoon peanut butter ( used Skippy Honey Nut)
1 teaspoon whole grain mustard
1/2 teaspoon soy sauce ( used light soy sauce)
4 slices cooked bacon- crumbled into bite size pieces
Lettuce to fill bottom of your bowl

Directions:

Peel and slice the sweet potato into small sticks and add to a pot of water. Bring to a boil and cook - about 5-7 minutes.

Whisk the mayo, peanut butter, mustard and soy sauce in a medium bowl.

When the sweet potatoes are done, drain and add to the dressing in the bowl and add the bacon.

Toss to coat evenly and serve over a bed of lettuce. 

I served it warm. Next time double the dressing.

  1. Now that's what I call an interesting combo...........and one delicious looking salad. I'd be happy with a serving of that and nothing else on a warm day for sure. Bacon and sweet potatoes? I'm in! Bob has NO idea what he's missing not eating sweet potatoes-that's OK-all the more for me! :)

  2. I love sweet potatoes, but the thought of them coated with mayo does not sound like something I might like. I would love the bacon and if there was a bit of brown sugar mixed in, I would be drooling. The bacon would be the salty and the sweet potatoes the yummy sweet. Might have to try.

  3. Myra- I'm not a mayo fan but your can't taste it with the mustard and the soy sauce. Use greek yogurt as as sub for the mayo or add your own dressing. It's really good.

  4. Sweet potatoes and bacon sound like an excellent salad to me! The mixture of PB and mayo gives me pause, but you know I'll try anything!

    1. Thanks Michelle for stopping by. I didn't have any Greek yogurt in the fridge or I would of used that. Like I said next time I would double the dressing.     1. Dottie- This is the first of 4 sweet potato recipes to go up. Tomorrow are sweet potato tater tots and then I have two more I need to post. Got such a good deal on sweet potatoes- they were 39 cents a pound. Just can't resist a deal and sweet potatoes are one of my favorites.
