Scrumptious Zucchini Brownies-

I spotted this recipe on Facebook. Old Hippie Chicks posted it and I had two zucchini in the fridge and like the idea that each brownie has 120 calories.






1/2 cup applesauce
2 medium bananas-mashed
1 1/2 cups sugar or honey
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp. salt
2 cups finely shredded zucchini
2 cups all purpose flour
1/2 cup walnut pieces (didn't use)

Preheat oven to 350 degrees

Grease a 9 x 13 pan


In a large bowel mix applesauce, sugar,and the mashed banana. Add the vanilla and cocoa powder and mix again.

Measure out the baking soda and salt. Add to the above mixture.

Add the finely grated zucchini and mix again

Next add the flour and the walnuts if you are going to add them

Spread into the greased 9 x 13 pan and bake for about 25 mins or until the brownies spring back in the pan.

Note: I made zucchini brownies awhile back. No oil or eggs in this and the taste is excellent. 
Sure fixed my chocolate craving!

  1. Wow-no oil or eggs! That's something you don't see often in brownies. They look nice and fudgy too----can't beat that with a stick.

    Now all I need is the garden to GIVE ME ZUCCHINI.......man what a year-I was up to my eyeballs in them a year ago at this time. Patience Carol.........patience.........NOT one of my virtues.

    They look like a great chunk of chocolate. They also are On the healthier side too. I skipped zucchini this year. I have farm stands all around me. My sparse garden is looking very sickly. No eggplant or tomatoes. I did have some hotter than Haiti jalapenos and some very nice Green Bell Peppers.

    Other than a nice crop of Rosemary and Basil that's it. I just get too late of a start to be bothered with a garden.

    These are amazing! I should of waited to take a photo but I cut and they were a little gooey, good kind of gooey :-)

    I had to put them in the freezer, I ate more than 120 calories worth!

  4. Good morning to you all....these look very yummy. I used to use applesauce instead of oil and eggs in lots of muffin recipes, and they were great. I can see where you would have to put these in the freezer, I would have pigged out too. I guess my thought is, if you can see them, why not eat them??
