Crunchy Broccoli and Bacon Salad

I found and adapted this recipe from a cool blog called Hot Eats and Cool Reads

Sheena to my surprise adapted this recipe from Taste Of Home. I liked this recipe because it's mayo free. 

My little patio cherry tomatoes are just starting to turn red so I had a toss a few in. Since I'm not a fan of sunflower kernels I toasted a bag (minus the flavoring) of Ramen Noodles in the oven. Love that added crunch.

8 cups fresh broccoli florets
1 bunch green onion, thinly sliced
1/2 cup dried cranberries
1/3 cup canola oil ( used sunflower oil)
1/3 cup seasoned rice vinegar
1/4 cups sugar
1/4 cups sunflower kernels ( used ramen)
3 bacon strips, cooked and crumbled

Combine broccoli,onion and cranberries in a large bowl.

In a small bowl, whisk together oil,vinegar and sugar.

Drizzle sauce over broccoli and coat.

Chill until serving.

Mix in ramen and bacon just before serving.

  1. Oh boy-another broccoli salad recipe for me to make! I'm hooked on the dang things and I'm with you Linda-I like the no mayonnaise in this one-a little is OK but when the dressing is just mayonnaise that's too much for me.

    I love that pop of color from the tomatoes too-my cherry tomatoes are still giving us some goodies, so I'd add those-and I love toasted Ramen noodles too.

    This is a must try. Just need to get Broccoli.

    1. Good Morning Ladies. Linda this is one I will try minus the sugar. Maybe splenda. I'm looking for different green type salads and I love broccoli. I wonder if the. Raman Noodles would hurt when I do try this?
      Tomorrow is going into my third week of sticking to my Bariatric Liquid diet . I have added some green vegies and small amounts of lean meat to it. I am not hungry and have to force myself to eat. I have lost 15.lb's .My weigh in is tomorrow and praying for more weight loss.
      I appreciate all the healthy sugar free recipes you have posted.
